About this recipe
Homemade granola fills the kitchen with the smell of toasted oats and maple, and it is far easier to make than most people expect. You control the sweetness, the oil and exactly what goes in.
The trick to big clusters is simple: add an egg white to the mix, press the granola into an even layer, and do not stir it while it bakes. Let it cool completely on the pan before breaking it up.
Equipment you'll need
- Large rimmed baking sheet
- Parchment paper
- Large mixing bowl
Tips for success
- Add dried fruit after baking; it burns and hardens in the oven.
- The granola will feel soft when it comes out of the oven. Do not bake it longer; it crisps as it cools.
- If your oven runs hot, check at 30 minutes, as the edges brown first.
Substitutions and variations
- Leave out the egg white for a vegan granola; the clusters will be a little smaller.
- Use honey instead of maple syrup (it browns faster, so check a few minutes early).
- Add 1/2 cup of coconut flakes for the last 10 minutes of baking.
Storage
To store: Store in an airtight jar at room temperature for up to 3 weeks, or freeze for up to 3 months.

Instructions
Step 1: Heat the oven
Heat the oven to 325°F (165°C) and line the baking sheet with parchment paper.
Step 2: Mix the dry ingredients
In a large bowl, combine the oats, nuts, seeds, cinnamon and salt.
Step 3: Add the wet ingredients
Whisk the maple syrup, oil and vanilla together, pour over the oat mixture and stir until everything is evenly coated. Stir in the frothy egg white.
Step 4: Press into the pan
Spread the mixture on the baking sheet and press it firmly into an even, compact layer with the back of a spatula.
Step 5: Bake without stirring
Bake for 35 to 40 minutes, rotating the pan halfway but not stirring, until deep golden brown and fragrant.
Step 6: Cool completely
Let the granola cool on the pan for at least 45 minutes; it crisps as it cools. Break into clusters and stir in the dried fruit.
