About this recipe
Baked oatmeal sits somewhere between a bowl of porridge and a soft, cakey breakfast bar. Oats, milk, egg and a little butter bake together until set, with juicy blueberries bursting throughout.
It is one of the easiest make-ahead breakfasts there is: one bowl, one dish, and enough squares for six mornings. Serve it warm with a splash of milk or a spoonful of yogurt.
Equipment you'll need
- 8 or 9-inch square baking dish
- Large mixing bowl
Tips for success
- Use frozen blueberries straight from the freezer; thawing them first will turn the oatmeal purple.
- For a firmer, more bar-like texture, bake for an extra 5 minutes and let it cool completely before slicing.
- Assemble the night before, cover and refrigerate, then bake in the morning, adding 5 minutes to the time.
Substitutions and variations
- Use diced apple or pear with an extra 1/2 teaspoon of cinnamon instead of blueberries.
- Replace the butter with coconut oil and use a plant milk for a dairy-free version.
- Swap the maple syrup for honey or 1/4 cup of brown sugar.
Storage and reheating
To store: Cool, cover and refrigerate for up to 5 days. Freeze individual squares, wrapped, for up to 3 months.
To reheat: Microwave a square for 45 to 60 seconds, or warm several in a covered dish in a 325°F (165°C) oven for 10 to 15 minutes.
