About this recipe
French toast casserole gives you all the flavour of French toast without standing at the stove flipping slices. Cubes of rich bread soak in a vanilla and maple custard overnight, then bake into a puffy, golden dish.
A buttery cinnamon streusel on top adds a crisp, crunchy contrast to the soft, custardy centre. It is ideal for holidays, guests or any weekend when you want breakfast to take care of itself.
Equipment you'll need
- 9 x 13-inch baking dish
- Large mixing bowl
Tips for success
- Stale bread absorbs the custard best. If your bread is fresh, toast the cubes in a 300°F (150°C) oven for 10 minutes first.
- Cover loosely with foil if the top browns before the centre is set.
- Let the dish stand at room temperature while the oven heats; it helps the centre cook evenly.
Substitutions and variations
- Scatter 1 1/2 cups of blueberries or diced apple between the bread cubes.
- Use a sturdy sandwich loaf or French bread instead of challah.
- Skip the streusel and drizzle with maple syrup to serve.
Storage and reheating
To store: Refrigerate leftovers, covered, for up to 4 days, or freeze portions for up to 2 months.
To reheat: Microwave portions for 1 minute, or reheat covered in a 325°F (165°C) oven for 15 minutes.

Instructions
Step 1: Fill the dish
Butter the baking dish and spread the bread cubes in an even layer.
Step 2: Make the custard
Whisk the eggs, milk, cream, maple syrup, vanilla, cinnamon and salt until smooth. Pour evenly over the bread and press down gently so every cube is moistened.
Step 3: Chill overnight
Cover and refrigerate for at least 8 hours, or up to 24 hours.
Step 4: Make the streusel
In the morning, mix the brown sugar, flour and cinnamon, then rub in the cold butter with your fingertips until crumbly. Refrigerate until needed.
Step 5: Bake
Heat the oven to 350°F (175°C). Sprinkle the streusel over the casserole and bake uncovered for 45 to 55 minutes, until puffed and golden and the centre is set; a knife inserted in the centre should come out without liquid custard, and the centre should reach 160°F (71°C).
Step 6: Rest and serve
Rest for 10 minutes, then serve with maple syrup and berries.
