About this recipe

Avocado toast is the definition of a simple breakfast done well. Good bread toasted until really crisp, ripe avocado mashed with lemon and salt, and a few finishing touches are all you need.

The base recipe takes five minutes. Below you will find a few of our favourite toppings, from a fried egg to tomatoes and feta, to turn it into a more filling meal.

Tips for success

  • A ripe avocado yields to gentle pressure near the stem. If it is still firm, leave it at room temperature for a day or two.
  • Season the avocado well; salt and acid are what make it taste vibrant.
  • Rub the hot toast with a cut garlic clove before adding the avocado for extra flavour.

Substitutions and variations

  • Use gluten-free bread for a gluten-free breakfast.
  • Mash a spoonful of Greek yogurt or cottage cheese into the avocado for a creamier, higher-protein spread.
  • Replace the chilli flakes with a drizzle of chilli crisp or hot sauce.

Storage

To store: Avocado toast is best eaten immediately. Store a leftover avocado half with the stone in, cut side covered tightly, in the fridge for up to 1 day.

Instructions

  1. Step 1: Toast the bread

Toast the bread until deeply golden and crisp, so it holds up under the avocado.

  2. Step 2: Smash the avocado

Halve and stone the avocado and scoop the flesh into a bowl. Add the lemon juice and a pinch of salt and mash with a fork, leaving some texture.

  3. Step 3: Spread

Spread the avocado thickly over the warm toast.

  4. Step 4: Finish

Drizzle with olive oil, sprinkle with flaky salt and red pepper flakes and add any toppings you like. Serve right away.
