About this recipe

Corned beef hash is the best thing that can happen to leftover corned beef. Diced beef, potatoes and onions are fried together and pressed into the pan until a deeply browned, crunchy crust forms.

Parboiled or leftover cooked potatoes are the key to speed: they only need to crisp, not cook through. Serve it with fried or poached eggs on top.

Equipment you'll need

  • Medium pot
  • Large (12-inch) cast-iron skillet

Tips for success

  • Press the hash firmly and leave it alone; the crust only forms with undisturbed contact with the hot pan.
  • A cast-iron skillet gives the best crust.
  • Dice the corned beef and potatoes to a similar size for even cooking.

Substitutions and variations

  • Use leftover roast beef, pastrami or ham instead of corned beef.
  • Swap half the potatoes for sweet potato.
  • Add a diced green bell pepper with the onion.

Storage and reheating

To store: Refrigerate leftovers for up to 4 days.

To reheat: Re-crisp in a hot skillet with a little oil until heated through to 165°F (74°C).

Instructions

  1. Step 1: Parboil the potatoes

Cover the potatoes with cold salted water, bring to a boil and cook for 5 minutes until just tender. Drain well and let them steam dry.

  2. Step 2: Soften the onion

Heat the butter and oil in the skillet over medium heat. Cook the onion for 5 minutes until soft.

  3. Step 3: Add potatoes and beef

Add the potatoes, corned beef, paprika and pepper and toss to combine. Taste before adding salt; corned beef is already salty.

  4. Step 4: Press and crisp

Press the mixture firmly into an even layer and cook without stirring for 6 to 8 minutes, until a deep brown crust forms on the bottom.

  5. Step 5: Flip in sections

Flip the hash in sections with a spatula, press down again and cook for another 5 to 6 minutes. Repeat once more for extra crispy bits.

  6. Step 6: Serve

Scatter with parsley and serve hot, topped with eggs if you like.
