About this recipe
The Denver omelette, also called a Western omelette, is an American diner staple: diced ham, green bell pepper and onion, browned in butter and wrapped in fluffy eggs with melted cheddar.
Cooking the filling first brings out the sweetness of the vegetables and warms the ham, so the omelette itself only needs a couple of minutes.
Equipment you'll need
- 8 or 10-inch nonstick skillet
- Silicone spatula
Tips for success
- Dice the vegetables small so they soften quickly and fold neatly into the omelette.
- Keep the heat moderate; high heat makes omelettes tough and brown.
- For a diner-style 'scramble', simply stir the filling into the eggs as they cook.
Substitutions and variations
- Use red bell pepper, or add sliced mushrooms.
- Swap the cheddar for Swiss or pepper Jack.
- Replace the ham with crumbled bacon or diced turkey.
Storage
To store: Best eaten immediately.

Instructions
Step 1: Cook the filling
Melt half the butter in the skillet over medium heat. Add the ham, pepper and onion and cook for 3 to 4 minutes, until the vegetables are softened and the ham is lightly browned. Transfer to a plate.
Step 2: Beat the eggs
Beat the eggs with the salt and pepper until smooth.
Step 3: Cook the omelette
Melt the remaining butter in the pan over medium-low heat. Add the eggs and cook, pushing the set edges towards the centre and tilting the pan so uncooked egg runs underneath, until almost set, about 2 minutes.
Step 4: Fill and fold
Spoon the filling and cheese over one half, fold the other half over and cook for 1 minute more until the cheese melts and the eggs are set.
Step 5: Serve
Slide onto a plate and serve with toast or home fries.
