About this recipe

This is the kind of recipe that fills the house with a wonderful smell on a slow afternoon. Large chunks of beef chuck brown in a heavy pot, then braise gently in red wine and tomatoes until they can be shredded with a spoon.

Most of the cooking time is unattended. The real work happens at the start, when you take the time to brown the beef well and cook the vegetables down; those steps build the deep, savoury flavour of the finished sauce.

Ragù improves overnight, so it is a great make-ahead dish for entertaining. The recipe makes enough sauce for a pound of pasta with a little left over.

Equipment you'll need

  • Large Dutch oven with a lid
  • Large pot for the pasta

Tips for success

  • Pat the beef very dry before browning. Moisture on the surface causes the meat to steam rather than brown.
  • Cook the ragù a day ahead if you can. Chill it overnight, lift off any solidified fat, then gently reheat before tossing with freshly cooked pasta.
  • If you do not have an oven-safe pot, braise on the stovetop over the lowest heat, covered, stirring every 30 minutes and adding a splash of water if it starts to stick.

Substitutions and variations

  • Replace the wine with an equal amount of beef broth plus 1 tablespoon of red wine vinegar.
  • Use bone-in short ribs instead of chuck; add an extra 30 minutes of braising and discard the bones before shredding.
  • Tagliatelle, rigatoni or creamy polenta are all good alternatives to pappardelle.

Storage and reheating

To store: Refrigerate the ragù (without pasta) for up to 4 days, or freeze for up to 3 months. Tossed pasta keeps in the fridge for 2 to 3 days.

To reheat: Warm the ragù in a covered saucepan over medium-low heat, stirring occasionally and adding a splash of water if it has thickened, until it simmers.

Instructions

  1. Step 1: Season and brown the beef

Heat the oven to 325°F (165°C). Season the beef all over with the salt and pepper. Heat 2 tablespoons of oil in the Dutch oven over medium-high heat. Brown the beef in batches, without crowding, for 3 to 4 minutes per side until deeply browned. Transfer to a plate.

  2. Step 2: Cook the vegetables

Reduce the heat to medium and add the remaining oil, the onion, carrot and celery. Cook, scraping up the browned bits, for 8 to 10 minutes until soft and lightly golden. Add the garlic and tomato paste and cook for 2 minutes, stirring, until the paste darkens.

  3. Step 3: Deglaze with wine

Pour in the wine and simmer for 3 to 4 minutes, scraping the bottom of the pot, until reduced by about half.

  4. Step 4: Braise

Stir in the crushed tomatoes, broth, bay leaves and rosemary. Return the beef and any juices to the pot and bring to a simmer. Cover and transfer to the oven. Braise for 3 hours, stirring once or twice, until the beef shreds easily with a fork.

  5. Step 5: Shred the beef

Remove the bay leaves and rosemary stem. Shred the beef directly in the pot with two forks. If the sauce is thin, simmer it uncovered on the stovetop for 10 to 15 minutes to thicken. Taste and season with salt.

  6. Step 6: Cook the pasta

Bring a large pot of well-salted water to a boil and cook the pappardelle until al dente according to the package directions. Reserve 1 cup of the pasta water, then drain.

  7. Step 7: Toss and serve

Add the pasta to the ragù with the butter, Parmigiano-Reggiano and a splash of the reserved pasta water. Toss over low heat until the sauce coats the pasta, adding more water if needed. Serve topped with parsley and more cheese.
