About this recipe
The Reuben is an American deli legend: thinly sliced corned beef, melted Swiss cheese, tangy sauerkraut and creamy Russian dressing, griddled between slices of rye bread until crisp and golden.
Squeezing the sauerkraut dry and warming the corned beef before assembly are the secrets to a sandwich that is hot all the way through and not soggy.
Equipment you'll need
- Large skillet or griddle
- Small bowl
Tips for success
- Squeeze the sauerkraut thoroughly so it does not soak the bread.
- Cover the pan for the first minute or two to help the cheese melt.
- Medium-low heat keeps rye bread from burning before the centre is hot.
Substitutions and variations
- Use pastrami for a Reuben variation, or turkey with coleslaw for a Rachel.
- Use Thousand Island dressing instead of Russian dressing.
- Swap Swiss for Gruyère or provolone.
Storage
To store: Best eaten immediately. Refrigerate leftover dressing for up to 1 week.
