About this recipe
Zucchini fritters are a delicious way to use up a glut of summer squash. Grated zucchini is salted and squeezed dry, then bound with egg, flour, feta, scallions and herbs and pan-fried until crisp and golden.
Serve them with a simple garlic yogurt sauce and a salad, or tuck them into a pita.
Equipment you'll need
- Box grater
- Clean kitchen towel
- Large nonstick skillet
Tips for success
- Squeezing out the water is the key to crisp fritters that hold together.
- Taste before adding extra salt, since feta is already salty.
- Keep cooked fritters warm on a rack in a 250°F (120°C) oven while you fry the rest.
Substitutions and variations
- Use a gluten-free flour blend or chickpea flour.
- Swap feta for grated Parmesan.
- Add grated carrot or corn kernels to the batter.
Storage and reheating
To store: Refrigerate cooked fritters for up to 3 days.
To reheat: Reheat on a baking sheet in a 375°F (190°C) oven for 8 to 10 minutes until crisp.
