About this recipe

A caprese sandwich turns the classic Italian salad of tomato, mozzarella and basil into a satisfying lunch. Toasted ciabatta holds everything together, while a layer of pesto adds extra herby flavour.

It is a sandwich that relies on great ingredients, so use the ripest tomatoes and freshest mozzarella you can find.

Tips for success

  • Pat the mozzarella and tomato dry with paper towels so the bread stays crisp.
  • For a warm version, press the assembled sandwich in a skillet until the mozzarella softens.
  • Pack the tomato separately and add it just before eating if making it ahead.

Substitutions and variations

  • Use burrata for an extra-creamy sandwich.
  • Add a few slices of prosciutto or roasted red pepper.
  • Use focaccia or a baguette instead of ciabatta.

Storage

To store: Best eaten the day it is made.
