About this recipe
Steel cut oats are whole oat groats chopped into small pieces rather than rolled flat. They take longer to cook than rolled oats but reward you with a nutty flavour and a satisfyingly chewy, creamy texture.
The method below uses a reliable ratio of four parts liquid to one part oats. Toasting the oats briefly first deepens their flavour, and a splash of milk at the end makes them extra creamy.
Equipment you'll need
- Medium saucepan
Tips for success
- For a quicker morning: bring the water to a boil the night before, stir in the oats, turn off the heat, cover and leave overnight. In the morning add the milk and simmer for 8 to 10 minutes.
- Stir more frequently in the last 10 minutes, when the oats are most likely to stick.
- Cook a double batch and portion it into containers for the week.
Substitutions and variations
- Use all water for a lighter porridge, or all milk for a richer one (watch closely, as milk can scorch).
- Replace the milk with any plant milk.
- Make it savoury: cook in broth and top with a fried egg, scallions and soy sauce.
Storage and reheating
To store: Refrigerate cooled oats in airtight containers for up to 5 days, or freeze portions for up to 3 months.
To reheat: Reheat in a saucepan or the microwave with a splash of milk or water, stirring until hot and creamy.

Pour in the water and milk, add the salt and bring to a boil, stirring.
Step 3: Simmer
Reduce the heat to low and simmer uncovered for 20 to 30 minutes, stirring every few minutes and more often towards the end, until the oats are tender but still slightly chewy.
