About this recipe
If you think oatmeal has to be sweet, this savoury version will change your mind. Rolled oats cooked in broth turn creamy and comforting, like a quick risotto.
Stir in spinach and Parmesan, then top each bowl with a crisp-edged fried egg, scallions and a drizzle of chilli crisp or soy sauce for a quick, satisfying breakfast.
Equipment you'll need
- Small saucepan
- Nonstick skillet
Tips for success
- Use low-sodium broth and add salt at the end, as Parmesan and soy sauce are both salty.
- Steel-cut oats also work; cook them according to our steel cut oats recipe, using broth.
- Leftover roasted vegetables make a great addition.
Substitutions and variations
- Use vegetable broth and skip the Parmesan, or use a vegan alternative, for a dairy-free bowl.
- Add sautéed mushrooms, kimchi or crumbled bacon.
- Swap the fried egg for a soft-boiled egg.
Storage and reheating
To store: Refrigerate cooked oats for up to 3 days; fry eggs fresh.
To reheat: Reheat the oats in a saucepan with a splash of broth, stirring, until hot.

Instructions
Step 1: Cook the oats
Bring the broth to a simmer in the saucepan. Stir in the oats and salt and cook over medium-low heat, stirring often, for 5 minutes until creamy.
Step 2: Add spinach and cheese
Stir in the spinach until wilted, then the Parmesan. Add a splash of water if it is too thick, taste and adjust the seasoning.
Step 3: Fry the eggs
Heat the oil in the skillet over medium-high heat and fry the eggs until the whites are set and the edges crisp. Cover for a minute if you prefer firm yolks.
Step 4: Serve
Divide the oats between bowls, top each with an egg and scatter with scallions. Add chilli crisp or soy sauce to taste.
