About this recipe
A sausage, egg and cheese sandwich is breakfast you can hold in one hand. Made at home, it is fresher, hotter and more satisfying than any drive-through version, and it takes about 15 minutes.
The folded-egg method gives you a neat, sandwich-sized egg that fits the muffin perfectly, with no special rings or moulds needed.
Equipment you'll need
- Large nonstick skillet
- Toaster
Tips for success
- Press the sausage patties slightly thinner than the muffin before cooking; they shrink as they cook.
- Low heat keeps the eggs tender rather than rubbery.
- To make ahead, wrap assembled sandwiches individually in foil and freeze.
Substitutions and variations
- Swap the sausage for bacon, ham or Canadian bacon.
- Use a bagel, biscuit or croissant instead of an English muffin.
- Add a handful of baby spinach or a slice of tomato.
Storage and reheating
To store: Wrap cooled sandwiches in foil or plastic and refrigerate for up to 3 days or freeze for up to 2 months.
To reheat: Unwrap, wrap in a paper towel and microwave for 30 to 45 seconds (1 to 2 minutes from frozen), until hot throughout.

Instructions
Step 1: Cook the sausage
Cook the sausage patties in the skillet over medium heat for 3 to 4 minutes per side, until browned and cooked through to 160°F (71°C). Transfer to a plate and wipe out the pan.
Step 2: Toast the muffins
Toast the English muffins while the sausage cooks.
Step 3: Cook the eggs
Melt the butter in the skillet over medium-low heat. Whisk each egg with a pinch of salt and pepper and pour into the pan as two separate rounds. Cook until the bottom is set, about 1 minute.
Step 4: Fold and melt
Fold the edges of each egg in towards the centre to make a square about the size of the muffin, flip, and top with a slice of cheese. Cover the pan for 30 to 60 seconds until the cheese melts and the egg is cooked through.
Step 5: Assemble
Layer each muffin with a sausage patty and a cheesy egg. Add hot sauce or ketchup and serve.
