About this recipe
Salisbury steak is diner comfort food at its best: tender, well-seasoned beef patties smothered in a savoury mushroom and onion gravy. This from-scratch version is far better than the frozen TV dinners many of us remember.
The patties are seared for a flavourful crust, then simmered in the gravy until cooked through, so they stay juicy. Serve with mashed potatoes, egg noodles or rice to soak up the gravy.
Equipment you'll need
- Large skillet with a lid
- Instant-read thermometer
Tips for success
- Mix the patty ingredients gently; overworking makes them dense.
- Ground beef needs to reach 160°F (71°C) in the centre; check with a thermometer.
- Add a splash of broth if the gravy gets too thick.
Substitutions and variations
- Use ground turkey (cook to 165°F / 74°C) for a lighter version.
- Use crushed crackers or oats instead of panko.
- Thicken the gravy with cornstarch and use gluten-free breadcrumbs for a gluten-free dish.
Storage and reheating
To store: Refrigerate for up to 3 days. Freeze the patties in gravy for up to 3 months.
To reheat: Reheat in a covered skillet over medium-low heat with a splash of broth until steaming hot (165°F / 74°C).

Instructions
Step 1: Shape the patties
Gently mix the beef, panko, egg, ketchup, Worcestershire, mustard, garlic and onion powders, salt and pepper. Shape into 4 oval patties about 3/4 inch thick.
Step 2: Sear
Heat the oil in the skillet over medium-high heat. Sear the patties for 3 to 4 minutes per side until well browned. They do not need to be cooked through yet. Transfer to a plate and pour off excess fat.
Step 3: Cook the onions and mushrooms
Melt the butter in the skillet over medium heat. Cook the onion and mushrooms for 8 to 10 minutes, stirring, until browned.
Step 4: Make the gravy
Sprinkle in the flour and stir for 1 minute. Gradually stir in the broth, Worcestershire and thyme, scraping up the browned bits, and bring to a simmer.
Step 5: Simmer
Return the patties and their juices to the pan, spoon the gravy over, cover and simmer gently for 8 to 10 minutes, until the patties reach 160°F (71°C).
Step 6: Serve
Sprinkle with parsley and serve with mashed potatoes and plenty of gravy.
