About this recipe
Beef kebabs are a crowd-pleasing grill dinner. Cubes of sirloin soak up a punchy marinade of olive oil, lemon, garlic, soy sauce and smoked paprika, which seasons the meat and keeps it tender.
Threading the vegetables on separate skewers from the beef lets each cook perfectly. Serve with rice, couscous, warm flatbread and a yogurt sauce.
Equipment you'll need
- Grill or grill pan
- 8 metal skewers (or wooden skewers soaked for 30 minutes)
- Instant-read thermometer
Tips for success
- Cut the beef into even cubes so everything cooks at the same rate.
- Do not marinate longer than 8 hours; the acid can make the meat mushy.
- The USDA recommends 145°F (63°C) with a 3-minute rest for whole cuts of beef.
Substitutions and variations
- Use beef tenderloin for extra tenderness, or chicken thighs (cook to 165°F / 74°C).
- Cook under the broiler for 8 to 10 minutes, turning once, if you do not have a grill.
- Use tamari for a gluten-free marinade.
Storage and reheating
To store: Refrigerate for up to 3 days. Freeze cooked beef for up to 3 months.
To reheat: Reheat gently in a skillet or a 350°F (175°C) oven just until warm, or use cold in salads and wraps.

Instructions
Step 1: Marinate the beef
Whisk the marinade. Toss the beef with two-thirds of it in a bowl or zip-top bag, cover and refrigerate for 1 to 8 hours.
Step 2: Prepare the vegetables
Toss the vegetables with the remaining marinade and the salt.
Step 3: Thread
Thread the beef onto 4 skewers and the vegetables onto 4 separate skewers, leaving a little space between pieces.
Step 4: Grill
Heat the grill to medium-high and oil the grates. Grill the vegetable skewers for 10 to 12 minutes and the beef skewers for 8 to 10 minutes, turning every couple of minutes, until the beef reaches 135°F (57°C) for medium-rare or 145°F (63°C) for medium.
Step 5: Rest and serve
Rest the beef for 5 minutes and serve with the vegetables, rice or flatbread and yogurt sauce.
