About this recipe

Pita bread makes a brilliant shortcut pizza base: thin, sturdy and ready in the time it takes the oven to heat. Pre-baking the pitas for a few minutes first gives a crisp, cracker-like crust that will not go soggy.

Set out the toppings and let everyone make their own; it is an easy lunch for kids to help with.

Equipment you'll need

  • Rimmed baking sheet

Tips for success

  • Go light on the sauce; too much makes the pita soggy.
  • For extra-crispy pizzas, bake directly on the oven rack for the last 2 minutes.
  • Pre-cook watery vegetables such as mushrooms before topping.

Substitutions and variations

  • Use naan, English muffins or tortillas as the base.
  • Make a white pizza with ricotta, garlic and spinach instead of tomato sauce.
  • Use dairy-free cheese for a dairy-free version.

Storage and reheating

To store: Refrigerate leftovers for up to 2 days.

To reheat: Reheat in a 400°F (200°C) oven or air fryer for 4 to 5 minutes until crisp.
