About this recipe

A cheese quesadilla is one of the quickest lunches you can make: a flour tortilla folded around melted cheese and toasted in a skillet until crisp and golden.

Medium heat is the key. It gives the cheese time to melt completely while the tortilla turns crunchy rather than burnt. Once you have the basic method, add any fillings you like.

Equipment you'll need

  • Large nonstick skillet
  • Wide spatula

Tips for success

  • Do not overfill; too much cheese oozes out and burns.
  • Freshly grated cheese melts more smoothly than pre-shredded cheese, which contains anti-caking starch.
  • Keep cooked quesadillas warm on a rack in a 200°F (95°C) oven if making a batch.

Substitutions and variations

  • Add black beans, sautéed peppers, cooked chicken or chorizo with the cheese.
  • Use corn tortillas for a gluten-free version (use two tortillas per quesadilla, stacked).
  • Cook in a dry pan or with a little oil instead of butter.

Storage and reheating

To store: Best eaten immediately. Refrigerate leftovers for up to 2 days.

To reheat: Reheat in a dry skillet over medium-low heat until crisp and hot.
