About this recipe
The club sandwich is a lunch-counter classic: three slices of toasted bread stacked with roast turkey, crisp bacon, lettuce, tomato and mayonnaise, then cut into triangles and held together with cocktail picks.
The trick to a club that does not slide apart is toasting the bread well, spreading mayo on every layer to help it stick, and pressing the sandwich gently before cutting.
Equipment you'll need
- Skillet or baking sheet
- Toaster
- Cocktail picks
Tips for success
- Toast the bread well; soft bread squashes under the weight of three layers.
- Use a serrated knife and a gentle sawing motion so the layers stay put.
- Pat the tomato slices dry with a paper towel to stop the toast going soggy.
Substitutions and variations
- Use sliced chicken breast or ham instead of turkey.
- Add a slice of cheddar or Swiss to the turkey layer.
- Swap the mayo for avocado mash.
Storage
To store: Club sandwiches are best eaten fresh. Refrigerate any leftovers, wrapped, and eat within 1 day; keep perishable fillings refrigerated and do not leave them out for more than 2 hours.

Instructions
Step 1: Cook the bacon
Cook the bacon in a skillet over medium heat for 8 to 10 minutes until crisp. Drain on paper towels and cut each slice in half.
Step 2: Toast the bread
Toast all 6 slices of bread until golden and firm.
Step 3: Build the first layer
Spread mayonnaise on one side of each slice. On 2 slices, layer half the turkey and a lettuce leaf. Top each with a second slice of toast, mayo side down.
Step 4: Add the second layer
Spread mayonnaise on the top of the middle slices. Add the bacon and tomato slices, seasoned with a little salt and pepper, then finish with the last slices of toast, mayo side down.
Step 5: Secure and cut
Press each sandwich gently, insert 4 cocktail picks in a square pattern and cut diagonally into quarters with a sharp serrated knife.
