About this recipe

The BLT is proof that a few great ingredients need very little help: crisp, salty bacon, juicy ripe tomato, cool crunchy lettuce and a swipe of mayonnaise on toasted bread.

Baking the bacon in the oven gives flat, evenly crisp strips that are easy to layer, and seasoning the tomato slices with a pinch of salt makes them taste even better.

Equipment you'll need

  • Rimmed baking sheet
  • Wire rack (optional)
  • Toaster

Tips for success

  • Build the sandwich lettuce-first; it acts as a barrier between the juicy tomato and the bread.
  • Use the ripest, in-season tomatoes you can find; they make the biggest difference.
  • Thick-cut bacon gives a meatier sandwich that does not shatter when you bite.

Substitutions and variations

  • Add sliced avocado for a BLAT.
  • Use turkey bacon for a lighter sandwich.
  • Swap the mayo for a garlicky aioli.

Storage

To store: Best eaten immediately. Cooked bacon keeps in the fridge for up to 4 days.
