About this recipe

A tofu scramble is the plant-based answer to scrambled eggs. Firm tofu is crumbled into a hot pan with vegetables and seasoned with turmeric for colour, cumin for warmth and nutritional yeast for a savoury, cheesy note.

For an extra egg-like flavour, look for kala namak (Indian black salt), which has a naturally sulphurous aroma. It is optional but surprisingly convincing.

Equipment you'll need

  • Large nonstick skillet

Tips for success

  • Crumble the tofu by hand rather than cutting it; irregular pieces look and feel more like scrambled eggs.
  • Add the kala namak at the end, as its aroma fades with long cooking.
  • The splash of plant milk makes the scramble creamier.

Substitutions and variations

  • Use silken tofu mixed with firm tofu for a softer, creamier scramble.
  • Add black beans and salsa for a Tex-Mex scramble.
  • Stir in sautéed mushrooms or leftover roasted vegetables.

Storage and reheating

To store: Refrigerate leftovers in an airtight container for up to 4 days.

To reheat: Reheat in a skillet or the microwave with a splash of plant milk until hot.

Instructions

  1. Step 1: Press the tofu

Pat the tofu dry with a clean towel and press gently to remove excess water.

  2. Step 2: Cook the vegetables

Heat the oil in the skillet over medium heat. Cook the onion and pepper for 4 to 5 minutes until softened.

  3. Step 3: Crumble in the tofu

Crumble the tofu into the pan with your hands into bite-sized pieces. Cook for 4 to 5 minutes, stirring occasionally, until any liquid has evaporated and the tofu is lightly golden.

  4. Step 4: Season

Sprinkle over the turmeric, cumin, garlic powder, nutritional yeast and salt, then add the plant milk and stir until the tofu is evenly coloured and coated.

  5. Step 5: Add the spinach

Stir in the spinach and cook for 1 minute until wilted. Season with black pepper, top with scallions and serve with toast.
