About this recipe

This sweet potato hash is a satisfying one-skillet breakfast. Diced sweet potatoes steam briefly under a lid to soften, then crisp and caramelise with peppers, onions and smoky spices.

To finish, you crack eggs into little wells in the hash and cover the pan until they are set, so everything is ready at the same time and there is only one pan to wash.

Equipment you'll need

  • Large (12-inch) skillet with a lid

Tips for success

  • Cut the sweet potatoes into even dice so they cook at the same rate.
  • Do not stir too often during browning; let the edges caramelise.
  • Cook the eggs a minute or two longer, until the yolks are firm, if serving anyone pregnant, very young, older or immunocompromised.

Substitutions and variations

  • Add crumbled cooked sausage, chorizo or bacon with the onions.
  • Use a mix of sweet potato and regular potato.
  • Replace the eggs with black beans and avocado for a vegan hash.

Storage and reheating

To store: Refrigerate the hash (without eggs) for up to 4 days.

To reheat: Reheat the hash in a skillet until hot, then cook fresh eggs on top.

Instructions

  1. Step 1: Steam the sweet potatoes

Heat the oil in the skillet over medium heat. Add the sweet potatoes and salt, stir to coat, then add 3 tablespoons of water, cover and cook for 8 to 10 minutes, stirring once, until nearly tender.

  2. Step 2: Brown

Uncover, increase the heat to medium-high and cook for 5 to 7 minutes, turning occasionally, until browned in places.

  3. Step 3: Add the vegetables

Add the onion and pepper and cook for 5 minutes until softened. Stir in the garlic, smoked paprika, cumin and pepper and cook for 1 minute.

  4. Step 4: Add the eggs

Make 4 wells in the hash, crack an egg into each and season with a pinch of salt. Reduce the heat to medium-low, cover and cook for 5 to 7 minutes, until the whites are completely set and the yolks are cooked to your liking.

  5. Step 5: Serve

Sprinkle with scallions and serve straight from the pan.
