About this recipe

Home fries are the diner side that makes any egg breakfast feel complete: cubes of potato fried until golden, with sweet onions, peppers and a little paprika.

Parboiling the potatoes first is the shortcut to getting it right. It cooks them through quickly, so in the skillet you can focus on getting the outside crisp rather than waiting for the inside to soften.

Equipment you'll need

  • Medium pot
  • Large (12-inch) cast-iron or heavy skillet

Tips for success

  • Letting the parboiled potatoes steam dry helps them brown instead of steaming in the pan.
  • Use a large enough skillet for a single layer, or cook in two batches.
  • Add spices at the end so they do not burn.

Substitutions and variations

  • Red potatoes work well and do not need peeling.
  • Add diced cooked bacon, ham or chorizo with the vegetables.
  • Use leftover boiled or roasted potatoes and skip the parboiling.

Storage and reheating

To store: Refrigerate leftovers for up to 4 days.

To reheat: Reheat in a hot skillet with a splash of oil, or in a 400°F (200°C) oven or air fryer for 8 to 10 minutes, until crisp.

Instructions

  1. Step 1: Parboil

Put the potatoes in the pot, cover with cold water and add a generous pinch of salt. Bring to a boil and cook for 5 to 6 minutes, until just tender at the edges but still firm in the centre. Drain well and let them steam dry for a few minutes.

  2. Step 2: Brown the potatoes

Heat the oil and butter in the skillet over medium-high heat. Add the potatoes in a single layer and cook, turning every few minutes, for 10 to 12 minutes until golden and crisp on several sides.

  3. Step 3: Add the vegetables

Add the onion and pepper and cook for 5 to 6 minutes more, stirring occasionally, until softened and lightly charred.

  4. Step 4: Season

Sprinkle with the paprika, garlic powder, salt and pepper and toss for 1 minute. Taste, adjust the salt, scatter with parsley and serve.
