About this recipe
A great chocolate chip cookie should be golden at the edges, soft and chewy in the middle, and generous with the chocolate. This recipe uses more brown sugar than white for that chewy texture and a hint of caramel flavour.
Chilling the dough for 30 minutes before baking is optional but worthwhile. Cold dough spreads less in the oven, so the cookies bake up thicker, and the rest gives the flour time to hydrate.
Take the cookies out when the centres still look slightly underdone. They will finish setting on the hot baking sheet.
Equipment you'll need
- Stand mixer or hand mixer
- 2 large baking sheets
- Parchment paper
- Wire cooling rack
Tips for success
- Measure flour by weight if you can. If using cups, spoon the flour into the cup and level it off; scooping straight from the bag packs in too much flour and makes dry cookies.
- Softened butter should give slightly when pressed but still hold its shape. Butter that is too warm or melted makes cookies spread thin.
- Placing dough on a hot baking sheet makes cookies spread unevenly. Let the sheets cool, or rotate between two sheets.
Substitutions and variations
- Use chopped dark chocolate in place of chips for pools of melted chocolate.
- Replace 1 cup of the chocolate chips with toasted chopped walnuts or pecans.
- A 1:1 gluten-free flour blend that contains xanthan gum can replace the all-purpose flour.
Storage and reheating
To store: Store cooled cookies in an airtight container at room temperature for up to 4 days. Freeze scooped balls of raw dough on a tray, then transfer to a bag and keep for up to 3 months.
To reheat: Bake frozen dough balls straight from the freezer at 375°F (190°C), adding 1 to 2 minutes to the baking time. Warm baked cookies in a 300°F (150°C) oven for 3 to 4 minutes to refresh them.

Instructions
Step 1: Mix the dry ingredients
Whisk the flour, baking soda and salt together in a medium bowl.
Step 2: Cream the butter and sugars
In a large bowl, beat the butter, brown sugar and granulated sugar on medium speed for 2 to 3 minutes, until light and fluffy.
Step 3: Add the eggs and vanilla
Beat in the eggs one at a time, followed by the vanilla, scraping down the bowl as needed.
Step 4: Combine
Add the flour mixture and mix on low speed just until combined. Stir in the chocolate chips with a spatula.
Step 5: Chill the dough
Cover the bowl and refrigerate for 30 minutes. Meanwhile, heat the oven to 375°F (190°C) and line the baking sheets with parchment paper.
Step 6: Bake
Scoop rounded tablespoons of dough onto the prepared sheets, spacing them 2 inches apart. Bake one sheet at a time for 9 to 11 minutes, until the edges are golden but the centres still look slightly soft. Sprinkle with flaky salt, if using.
Step 7: Cool
Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack. Repeat with the remaining dough, letting the baking sheets cool between batches.
