About this recipe

A fruit crisp is the most relaxed of desserts: no rolling, no crimping, just sliced fruit in a baking dish under a crumbly topping. Here sweet apples are paired with fresh or frozen cranberries, which burst in the oven and add jewel-like colour and a pleasant tartness.

Use a mix of apple varieties if you can. A firm, tart apple such as Granny Smith holds its shape, while a sweeter one such as Honeycrisp or Gala softens and adds natural sweetness.

Let the crisp rest for 15 minutes after baking so the juices thicken, then serve warm with vanilla ice cream or a spoonful of whipped cream.

Equipment you'll need

  • 2-quart (8 x 8-inch or similar) baking dish
  • Rimmed baking sheet

Tips for success

  • Slice the apples evenly so they cook at the same rate. Thick slices may still be firm when the topping is done.
  • There is no need to thaw frozen cranberries; add them straight from the freezer.
  • Bubbling juices at the edges are the best sign that the filling has thickened properly.

Substitutions and variations

  • Use pears instead of some or all of the apples.
  • Swap the cranberries for 1 cup of blackberries or raspberries.
  • For a gluten-free crisp, use certified gluten-free oats and a 1:1 gluten-free flour blend.

Storage and reheating

To store: Cover and keep at room temperature for up to 1 day, or refrigerate for up to 4 days. The topping softens as it sits.

To reheat: Reheat in a 350°F (175°C) oven for 15 to 20 minutes to warm the fruit and re-crisp the topping.

Instructions

  1. Step 1: Heat the oven

Heat the oven to 375°F (190°C) and butter the baking dish.

  2. Step 2: Make the filling

In a large bowl, toss the apples and cranberries with the sugar, flour, lemon juice, cinnamon and salt. Spread evenly in the baking dish.

  3. Step 3: Make the topping

In another bowl, stir together the flour, oats, brown sugar, cinnamon and salt. Add the cold butter and rub it in with your fingertips until the mixture forms clumps the size of small peas.

  4. Step 4: Assemble

Scatter the topping evenly over the fruit, gently squeezing some into larger clumps.

  5. Step 5: Bake

Set the dish on a baking sheet to catch drips and bake for 40 to 45 minutes, until the topping is deep golden and the fruit juices are bubbling thickly around the edges. If the topping browns too quickly, cover loosely with foil.

  6. Step 6: Rest and serve

Let the crisp cool for at least 15 minutes before serving warm, with ice cream or whipped cream if you like.
