About this recipe
These spicy peanut noodles are the kind of lunch you will want to make again and again. A quick sauce of peanut butter, soy, rice vinegar, honey and chilli garlic sauce coats every strand of noodle.
They are just as good cold as they are warm, which makes them ideal for meal prep. Crunchy vegetables and chopped peanuts add texture.
Equipment you'll need
- Large pot
- Mixing bowl
Tips for success
- The sauce thickens as it sits; loosen leftovers with a splash of water or lime juice.
- Natural peanut butter works but may need a little more water and honey.
- Pack the peanuts separately so they stay crunchy.
Substitutions and variations
- Use tamari and rice noodles for a gluten-free version.
- Add shredded chicken, edamame or baked tofu for extra protein.
- Swap the peanut butter for almond butter or tahini.
Storage
To store: Refrigerate in airtight containers for up to 4 days.
