About this recipe

Mapo tofu is one of Sichuan cuisine's most famous dishes: soft cubes of tofu in a glossy red sauce that is spicy (la) and tingly-numbing (ma) at the same time.

The flavour comes from a few key pantry ingredients: doubanjiang (fermented chilli bean paste), fermented black beans and ground Sichuan peppercorns. Serve over steamed rice to soak up every drop.

Equipment you'll need

  • Wok or large skillet
  • Small dry pan for toasting peppercorns
  • Mortar and pestle or spice grinder

Tips for success

  • Push the tofu with the back of a spatula instead of stirring, so the cubes stay intact.
  • Doubanjiang is salty; taste before adding any extra salt.
  • Adjust the numbing tingle by adding more or less ground Sichuan pepper.

Substitutions and variations

  • Use ground beef, the original meat in many versions, or chopped mushrooms for a vegetarian dish with vegetable broth.
  • Use firm tofu if you prefer cubes that hold their shape more easily.
  • Use gluten-free doubanjiang and tamari if you need to avoid gluten; many bean pastes contain wheat.

Storage and reheating

To store: Refrigerate for up to 3 days. Freezing is not recommended, as the tofu becomes spongy.

To reheat: Reheat gently in a saucepan or the microwave until hot throughout.

Instructions

  1. Step 1: Blanch the tofu

Simmer the tofu cubes gently in salted water for 2 to 3 minutes, then drain carefully. This firms the surface and seasons it.

  2. Step 2: Toast the peppercorns

Toast the Sichuan peppercorns in a dry pan for 1 to 2 minutes until fragrant, then grind them finely.

  3. Step 3: Brown the pork

Heat the oil in the wok over medium-high heat. Cook the pork, breaking it up, for 3 to 4 minutes until browned and cooked through.

  4. Step 4: Fry the paste

Lower the heat to medium. Add the doubanjiang, black beans and chilli and stir for 1 minute until the oil turns red. Add the garlic and ginger for 30 seconds.

  5. Step 5: Simmer

Add the broth, soy sauce and sugar and bring to a simmer. Slide in the tofu and gently push it around (rather than stirring) to coat. Simmer for 4 to 5 minutes.

  6. Step 6: Thicken and serve

Stir the cornstarch slurry and add it in two additions, gently nudging the tofu until the sauce is glossy. Sprinkle with ground Sichuan pepper and scallions and serve with rice.
