About this recipe

Shrimp fajitas are one of the fastest dinners you can make: shrimp take just a few minutes to cook, and everything happens in one skillet. Peppers and onions are seared first until charred at the edges, then the seasoned shrimp go in.

A homemade spice blend of chili powder, cumin, smoked paprika and garlic tastes brighter than a packet mix. Bring the skillet to the table and let everyone build their own.

Equipment you'll need

  • Large cast-iron skillet

Tips for success

  • Get the pan very hot so the vegetables char rather than steam.
  • Use large shrimp (21 to 25 per pound); they stay juicy in a hot pan.
  • Warm the tortillas in a dry skillet or wrapped in foil in the oven.

Substitutions and variations

  • Use thinly sliced chicken breast (cook to 165°F / 74°C) or flank steak.
  • Serve over rice or salad greens for a fajita bowl.
  • Use corn tortillas for a gluten-free dinner.

Storage and reheating

To store: Refrigerate the filling for up to 2 days. Freezing is not recommended.

To reheat: Reheat briefly in a hot skillet just until warm, so the shrimp do not toughen.
