About this recipe
Breakfast pizza is exactly what it sounds like: a crisp pizza base topped with melted cheese, crispy bacon and eggs that bake right on top. It is a fun, shareable brunch that everyone can help assemble.
Par-baking the crust for a few minutes before adding the toppings keeps it crisp underneath, and a very hot oven sets the eggs quickly.
Equipment you'll need
- Pizza stone, steel or large baking sheet
- Parchment paper
- Skillet
Tips for success
- Cracking each egg into a small cup first makes it easier to slide it into place on the pizza.
- Room-temperature dough stretches much more easily than cold dough.
- If the crust browns before the eggs are set, move the pizza to a higher rack for the last few minutes.
Substitutions and variations
- Use sausage, ham or sautéed mushrooms instead of bacon.
- Swap the cheddar for Gruyère or fontina.
- Use store-bought naan or flatbreads for individual breakfast pizzas.
Storage and reheating
To store: Refrigerate leftover slices for up to 2 days.
To reheat: Reheat slices in a hot skillet, covered, for 3 to 4 minutes, or in a 375°F (190°C) oven until hot throughout.

Instructions
Step 1: Heat the oven
Place a pizza stone, steel or upturned baking sheet in the oven and heat to 475°F (245°C) for at least 30 minutes.
Step 2: Cook the bacon
Cook the bacon in a skillet over medium heat until crisp, 8 to 10 minutes. Drain on paper towels and crumble.
Step 3: Shape and par-bake
Stretch the dough on a sheet of parchment into a 12 to 14-inch round or oval. Brush with the olive oil. Slide the parchment onto the hot stone and bake for 5 minutes, until just set and lightly puffed.
Step 4: Add the toppings
Remove from the oven, scatter over the mozzarella, cheddar and bacon, leaving a border. Make 5 small wells in the cheese and crack an egg into each. Season the eggs with salt and pepper.
Step 5: Bake
Return to the oven and bake for 8 to 12 minutes, until the crust is golden and the egg whites are completely set; bake a few minutes longer for firm yolks.
Step 6: Serve
Sprinkle with scallions and red pepper flakes, slice and serve immediately.
