About this recipe

Paneer tikka is a popular North Indian dish of paneer cheese marinated in yogurt and spices and cooked in a fiercely hot tandoor oven. At home, a very hot oven and a quick blast under the broiler give similar charred edges.

Paneer holds its shape when cooked, so it is perfect for skewers or sheet pans. Serve with mint chutney, sliced onions, lemon and warm naan, or fold into wraps.

Equipment you'll need

  • Rimmed baking sheet
  • Wire rack (optional)
  • Skewers (optional)

Tips for success

  • Use thick yogurt; thin yogurt slides off the paneer.
  • Soak wooden skewers in water for 20 minutes so they do not burn.
  • Do not overcook paneer, or it can turn rubbery.

Substitutions and variations

  • Use extra-firm tofu in place of paneer.
  • Add cherry tomatoes or mushrooms with the vegetables.
  • Cook on a hot grill instead of in the oven.

Storage and reheating

To store: Refrigerate for up to 3 days. Freezing is not recommended.

To reheat: Reheat in a hot skillet or a 400°F (200°C) oven for 5 to 8 minutes until warmed through.

Whisk the yogurt, oil, lemon juice, garlic, ginger, spices and salt in a large bowl.

  4. Step 4: Roast

Spread the paneer and vegetables in a single layer and roast for 12 to 15 minutes, turning once, until the vegetables are tender.

  5. Step 5: Char

Switch to the broiler and broil for 2 to 4 minutes, watching closely, until charred in spots.

  6. Step 6: Serve

Scatter with cilantro and serve with lemon wedges, mint chutney and naan.
