About this recipe

This chickpea stew is proof that a satisfying lunch can come almost entirely from the pantry. Chickpeas simmer in a tomato base spiced with smoked paprika and cumin, and part of them is mashed to thicken the stew.

A big handful of spinach goes in at the end. It is vegan, high in fibre and a meal-prep favourite, as the flavours deepen overnight.

Equipment you'll need

  • Large deep skillet or Dutch oven

Tips for success

  • Do not let the paprika burn; lower the heat if it starts to darken.
  • Serve with crusty bread, rice or a spoonful of yogurt (if not vegan).
  • Add a splash of water when reheating, as the stew thickens in the fridge.

Substitutions and variations

  • Use kale or Swiss chard instead of spinach, simmering for a few more minutes.
  • Add diced potato or sweet potato with the broth and simmer until tender.
  • Use white beans instead of chickpeas.

Storage and reheating

To store: Refrigerate for up to 5 days, or freeze for up to 3 months.

To reheat: Reheat on the stove or in the microwave, stirring, until steaming hot throughout.

  4. Step 4: Thicken

  5. Step 5: Add the spinach

Stir in the spinach a handful at a time until wilted, then add the lemon juice and season to taste.
