About this recipe
Chicken lettuce wraps are a light, crunchy lunch inspired by restaurant favourites. Ground chicken is stir-fried with garlic and ginger, then tossed in a glossy hoisin and soy sauce with crunchy water chestnuts.
Spoon the warm filling into cool, crisp lettuce leaves and eat them with your hands. They are on the table in about 20 minutes.
Equipment you'll need
- Large skillet or wok
- Instant-read thermometer
Tips for success
- Pat the lettuce leaves completely dry so the filling does not slide around.
- Dice the water chestnuts small for crunch in every bite.
- Pack the filling and lettuce separately for lunch and assemble just before eating.
Substitutions and variations
- Use ground turkey, pork or crumbled tofu instead of chicken.
- Use tamari and a gluten-free hoisin for a gluten-free version.
- Serve over rice instead of in lettuce cups.
Storage and reheating
To store: Refrigerate the filling for up to 3 days and the lettuce separately.
To reheat: Reheat the filling in a skillet or microwave until hot (165°F / 74°C).
