About this recipe

Most hams sold in supermarkets are already fully cooked, so making a glazed baked ham is really about reheating it gently without drying it out, then building a shiny, caramelised glaze.

Covering the ham with foil and adding a little liquid to the pan keeps it moist. The honey mustard glaze goes on in the final half hour, when the oven is turned up so it bubbles and darkens.

Equipment you'll need

  • Large roasting pan
  • Foil
  • Small saucepan
  • Pastry brush
  • Instant-read thermometer

Tips for success

  • Check the label: fully cooked hams packaged in a USDA-inspected plant should be reheated to 140°F (60°C); leftovers or repackaged ham to 165°F (74°C).
  • Watch the glaze closely in the hot oven; the sugar can burn quickly.
  • Save the ham bone for split pea or bean soup.

Substitutions and variations

  • Use maple syrup in place of honey.
  • Swap the apple juice for pineapple juice and add a pinch of ginger to the glaze.
  • For a boneless ham, reduce the reheating time to 10 to 12 minutes per pound.

Storage and reheating

To store: Refrigerate sliced leftovers within 2 hours for up to 4 days. Freeze for up to 2 months.

To reheat: Reheat slices covered with foil and a splash of water in a 325°F (165°C) oven until hot (165°F / 74°C), or use cold in sandwiches.

Instructions

  1. Step 1: Prepare

Heat the oven to 325°F (165°C). Discard any glaze packet. Place the ham cut side down in the roasting pan and pour the water around it.

  2. Step 2: Reheat

Cover tightly with foil and bake for 12 to 15 minutes per pound (about 1 1/2 to 1 3/4 hours), until the centre reaches 120°F (49°C).

  3. Step 3: Make the glaze

Meanwhile, simmer the brown sugar, honey, mustard, vinegar, cloves and cinnamon in the saucepan for 3 to 4 minutes until syrupy.

  4. Step 4: Glaze

Increase the oven to 400°F (200°C). Uncover the ham and brush generously with half the glaze, letting some run between the slices.

  5. Step 5: Caramelise

Bake uncovered for 10 minutes, brush with the remaining glaze and bake for 10 to 15 minutes more, until dark and sticky and the centre reaches 140°F (60°C).

  6. Step 6: Rest and carve

Rest for 15 minutes, then carve along the bone and serve with the pan juices.
